With the cast iron skillet dirty from the dust and sand of desert travel, the camp oven turned out to be an excellent cooking alternative
Pancakes in the Camp Oven
It was to be pancakes for brunch. That's a cross between breakfast and lunch. Pancakes from a shake bottle, just add water.
I'd gone to graet lengths to make an extention handle for the cast iron skillet and was looking forward to cooking on the coles without burning my fingers.
When I got the skillet out, it was covered in dust and sand from the trip. The grit being stuck to the oiled surface, there was little hope of getting the pan clean without a good deal of very hot water, detergent and elbow grease.
The wind was blowing strongly, so the skillet and pancake would soon be covered in sand and ash if I put it on the fire.
Ah ha, the camp oven has a lid. No sand in the camp oven and the lid will keep it that way when cooking. Just lift the lid to check it now and then. I keep a long tent peg for the purpose.
So preheat the oiled camp oven while shakeing the mix. Pour in some mix. Put on the lid and put the camp oven on the coles. Check it after a while and turn when ready, adding a little more oil. Nothing to it!
Serve with copious amounts of butter and raspberry jam. Lick your fingers when done and repeat the whole process.
